Apple-Topped & Cream Cheese-Filled Cornflake Crusted French Toast

Cornflake Crusted French Toast


What could be better on a lackadaisical weekend morning? I can't think of anything! Thick slices of crunchy french toast slathered with cream cheese and topped with a sweet and comforting apple & cranberry mixture warmed my chilly bones after one of the coldest nights we've had in ages. We're just teetering on the edge of fall and apple season is underway in upstate NY. This is a perfect way to celebrate it's bounty. And one of my favorites. Especially during the colder months when I crave the warmth and heartiness of it. The cornflake-crusted french toast stands on its own and the apple topping is equally delicious on pancakes or waffles.


Cornflake Crusted French Toast


Cornflake Crusted French Toast w/ Cream Cheese & Apple-Cranberry Topping

Apple & Cranberry Topping
(by Reeni)

2 tablespoon Butter
4 Apples, peeled and thinly sliced
1/3 cup dried Cranberries
2 tablespoon Brown Sugar
1 tablespoon Honey
1 cup water
1 teaspoon Cinnamon
2 teaspoon Lemon Juice, fresh squeezed

In a large skillet melt butter, add apples and toss. Add the rest of the ingredients. Toss. Cook over low-medium heat about 10 minutes or until apples are soft, stirring often.
Serve with french toast, pancakes or waffles.


Cream Cheese Filling
(by Reeni)

8 oz. softened Cream cheese
1 teaspoon Lemon juice, fresh squeezed
a few dashes of Cinnamon

Blend in a small bowl. Set aside.

Cornflake Crusted French Toast
(adapted from Kellogg's)

4 eggs
2 tablespoons milk
1 teaspoon Vanilla Extract
1 teaspoon Cinnamon
1 and 1/2 cups cornflake crumbs
6-8 slices thick bread
Butter, for frying

In a medium bowl whisk the eggs, milk, vanilla, and cinnamon together. Add the cornflake crumbs to a large shallow bowl or dish mix. Heat butter in a skillet over medium heat.

Heat a large skillet over medium-low heat. Add a pat of butter. Dip the slices of bread in the egg mixture then in the corn flakes crumbs. Brown in the buttered pan on both sides. Repeat until all your french toast is cooked. Keep the cooked slices warm in the oven on very low heat.

Serve with the cream cheese filling slathered in between and topped with the apple mixture, maple syrup, and whipped cream.

Pomx Chocolate Iced Coffee


Janny from POM Wonderful was very kind to send me samples of POMx Iced Coffee in Chocolate and Cafe au Lait flavors to try. No, they don't have pomegranate juice in them! But they do contain an anti-oxidant extract from the pomegranates. Everything about them is healthy. They are made with Rainforest Alliance Certified Arabica Coffee, growth hormone free milk and organic cane sugar. While they are fat-free they are not calorie free. That is my only complaint about them - 190 & 170 calories is too many calories for me to drink. I'd rather eat them! While I do appreciate the healthy ingredients, these will have to be a once-in-a-while treat for me. With all that said they were both delicious! The chocolate Iced Coffee is like chocolate milk with just a hint of coffee, and the cafe au lait has a much stronger coffee flavor, and was very creamy and milky. These are nice to have on hand to grab on the go or for a weekend breakfast treat. Thank-you Janny and Pom Wonderful for letting me sample another one of your delicious, healthy products!

How delicious does this look! I love how crunchy the french toast looks. I also had no idea POM was making iced coffee. Seems a bit weird for them to making a coffee product but if it's making them money then it probably doesn't matter.

You had me at that fabulous name Reeni. Apple, Cream Cheese, Cornflake, French Toast... who in the right mind could say no to that!? LOVE IT!

And those POM drinks sound fantastic! The calories remind me a bit of my favorite Starbucks bottled frappuccinos, and I tend to drink those as a random treat for a snack with a brown rice cake or fruit. Enjoy them!

I recently got some othe POMx teas recently. The new products are pretty good. I'd love to try the iced coffee.

Btw, I did buy the purple potatoes this weekend and now I need to decide how I want them cooked. I had been checking them out at the grocery store for a while and when I saw them on your blog, I made the decision to give them a try.
