Crispy, spicy, deep-fried chickpeas are one of my favorite things to eat in the whole world: I heart Falafel. This Chickpea and Spinach recipe is inspired by them. These are pan-fried in a lightly greased pan and are healthier than traditional deep-fried falafel.
These will satisfy any craving for falafel! Pile them high on flatbread or stuffed into pitas with home-made hummus, feta cheese and tomatoes. The hummus is a basic recipe I've been making for years and you can play around with it to suit your own taste. It's very forgiving. And totally delicious!

Chickpea and Spinach Patties with Feta Cheese and Tomato
(by Reeni)
1 can Chickpeas, drained and rinsed
2/3 cup chopped frozen Spinach, cooked, water squeezed out
1/4 cup diced Onion
2 cloves Garlic, minced
1/4 cup seasoned Bread Crumbs
1 Egg, beaten
1 tablespoon fresh Parsley, finely chopped
1/2 teaspoon Cumin
1/2 teaspoon Paprika
1/2 teaspoon Sea salt
fresh cracked Pepper
Vegetable Oil, for pan frying
Crumbled Feta, for serving
1. In a large bowl smash the Chickpeas with a potato masher or use your food processor to break them down. Add all the ingredients and mix well. Form four patties and refrigerate for a half hour.
2. Pan fry in a tiny amount of oil or cook on a George Foreman grill until golden brown on the outside and cooked through. About five minutes each side. Serve with Feta, Hummus, Lettuce and Tomato.

Hummus
(by Reeni)
1 can Chickpeas, drained and rinsed
1/4 cup Tahini
1/4 cup Extra Virgin Olive Oil
1/4 cup diced Onion
1 clove Garlic, minced
1/2 teaspoon Salt
1/2 teaspoon Cumin
1/2 teaspoon Paprika
Lemon juice, fresh squeezed
In the bowl of a food processor add all of your ingredients including a tablespoon of Lemon juice. Pulse until smooth. Taste and add more Lemon juice if desired. If the mixture is too thick add additional Olive Oil or Bottled Water a tablespoon at a time until you get the consistency you like. Taste and re-season to your personal taste preference. Drizzle additional Olive Oil on top for serving.

Yum, I love everything about this! It looks amazing :D
I love chickpeas but usually only have them on salads and I've never had hummus but have been wanting to try. Your recipes look so good and I will certainly be trying them out!
Oh how delightful are these creations. I am so very fond of chickpeas myself. I have got to try those patties, so very yum.XXOO
The patties look delicious - great idea! I love falafels, too; haven't made them in AGES, though. I also LOVE hummus!
I love chickpeas. Now you've got me craving for some hummas. I think I shall go make some this weekend with some baked pita chips.
Spinach! What a grand idea! I never would have thought of it. Loving the entire dinner - and it's one of those tings I never to think to make. Hmmm... must re-think! Scrumptious meal.
I'm not a big fan of chickpeas plain, but I love hummus and falafel, so those chickpea patties look amazing!

mmmmm that picture of hummus has got me drooooling! i'm just got "into" hummus recently, so i'm sure it'll be a while 'til i try and make my own. But i'm definitely keeping your recipe on file! :)
mmmmm, those look realllly good.
You can never have too many chickpeas in my opinion. It all looks great!
That sounds great, and I love your idea of pan-frying or grilling instead of frying in oil. I started doing the same with minced meat patties lately. Baking them in the oven takes a bit longer than in the pan (unless you got an oven with a fan and three baking trays) but they come out just as nice and much less fatty. And you don't have to clean a million fat splashes around your stove...
I think your writing is just fine! The chickpea patties and hummus look delicious!!
Reeni - This is right up my alley!
I have never had falafel but I LOVE chickpeas. I am sure I would like this too.
The recipe sounds great even juz look at it...with all those wonderful spices! Wow, well done Reeni!
that's a nice twist to the age old dish. and the hummus looks so delicious!
there you go, two things I've never tried and keep seeing everywhere: falafel and humus.
And I love chickpeas, so I guess I'll have to try these one day, sooner or later
Daisy's "mom" here:
That looks so, so delicious! I'm vegetarian, and we have a little Falafel cafe just down the street from us. We get a platter for two with falafel balls, hummus (made fresh 5x a day), Mediterranean salad, pickles, pita bread, and soup. It is soooooo yummy.
Love both of these...love chickpeas!!! I could eat hummus every day!
I love felafel and hoummus and haven't made either for an eternity! This may have just pushed me over the edge: looks so fabulously scrumptious!
Reeni, have I mentioned before that I wish we were neighbours? ;-)
These chickpeas look heavenly and I am sipping some South Africa Pinotage, and some of your chickpea would be just right for me.

Sounds like a great meal! The addition of spinach is perfect, and I was thinking next time I make falafel I should try a healthier method than frying. Grilling sounds great.
I love, love, love falafel! What a great spin!
I am sad to report that my George finally died. Time for a new one!
Wow, chickpeas and spinach, two of my favorite ingreds. This whole entire dish looks super yummy! :)
Falafel are my deep-fried treat of choice but I haven't attempted to try to make them myself. I would be tempted to bake them or George them as you did. I can't wait to try your hummus recipe!
Yumm. Everything looks delicious. I love chickpeas. We call them ce ce beans, and I always have my pantry stocked with them. I've made homemade hummus, but my problem is I can never get it smooth as Sabra's. They must add a lot of oil to make it that smooth.
Great chickpeas creation! Love chickpeas and I just had some for dinner =)
Wow, a chickpea heaven! Delicious!
I have a new-found love for Chickpeas lately, and this burger seriously sounds fantastic. I love how healthy it is with the added spinach! I do this with my own bean burgers along with diced onions, peppers, mushrooms, etc. and it makes such a delicious patty. LOVE IT!
xxoo
Heather

Reeni, you might consider yourself the Tin Man, but you sure have a big heart. Chickpeas have a special place in my heart - they were my mother's favorites.
Congrats to the winner!
What a great creation. I love chickpeas any ways.
These look delicious. How do you come up with these great combinations? A culinary genius - you are.

I'll definitely take a double dose of chickpeas! I love falafel and I will definitely give these patties a try. The look great!
Man - that looks way better than the frozen pizzas and cheese and crackers we have all the time. I think I've told you before, the Queen does NOT cook. It's up to the palace workers (aka: kids) to scare up dinner. I just cannot do it.
So...when ya comin' to cook?? xx
You can never get enough chickpeas! So tasty and healthy!
LOVE LOVE LOVE this post!
YUMMY! I can't wait to give this a try. Thanks for sharing. I would love for you to join me on diningwithdebbie.blogspot.com for Crock Pot Wednesday. We are all about good food and ease of preparation.
This is why I didn't click "Mark All as Read" in my RSS reader when I saw 200+ unread posts after slacking all weekend! This looks amazing... I love chickpeas! Starring this recipe so that I don't forget to give it a try!
Looks good to me! Especially that hummus. Good stuff. And as always, looking forward to seeing your next kitchen creation!
A real healthy and tasty meal...and so pretty too...
My experience with making falafel has been similar - they've been tasty but have fallen apart when I've tried to fry them. Your chickpea patties look and sound like a great alternative.
Mmmm now that is my kind of sandwich!!! chickpea heaven!
I love chickpeas, especially falafel. But your chickpea sound delicious! I could never have enough of hummus.
I love middle eastern food! These look absolutely delicious.
I would love to try this one.
Delicious..love the dip!
I like to make baked falafel, but these would be perfect too when the craving hits!
I love the idea of non-fried falafel! Brilliant and delicious!
I love chickepeas. I love hummus, chickpea curry, chickpeas in salad, chickpeas in stew... so of course I want to try your creations too :)
I'm so curious! I never had this!
Absolutely delicious and beautifully presented x
Major yum. I think you found the perfect solution to the falafal problem! :)
I love falafel & I love Hummus & I love anything mediterranean! Looks awesome.
Oh I love hummus, but I'm allergic to sesame so the tahini always gets me. I can usually eat a little but if I eat too much I get all itchy. I wonder if you can make a decent hummus without tahini....?
That looks SO good....I need to try to make my own hummus sometime!
oh how i love hummus! this looks delish. we had your spaghetti pie tonight... a real favorite around here every time :)
I love this - I love this and cannot wait to give it a try.
I sooo love hummus. I make a batch almost every week and very similar to your recipe. I add cilantro. I love anything with chickpea and this looks really delish!
