How to Make Crockpot Chicken Stock

Slow-Cooker Chicken Stock

I've discovered an easy way to make the best chicken stock. Rich, thick, and gelatinous with a flavor that can't be bought in any store. Dust off your crock-pots and get the most out of your chicken carcasses and the veggies going bad in your produce drawer. This will save you some money too, good stock is expensive. Fix it and forget about it, if you can, with the otherworldly smell that will permeate every nook and cranny of your house. Throw everything in, cover with water, bring to a boil, and then slow-cook over night or while your at work. Like magic your house will smell comforting and you'll have the tastiest stock waiting for you to make soups and stews with.
   
This recipe is not really a recipe but a basic starting point. If your missing one of the vegetables or have different herbs throw them in. No worries. I've made this with just a chicken carcass minus the veggies and herbs. It was amazing all on it's own and you can add flavor later when you use it in your recipes.

 Slow-Cooker Chicken Stock Begins

 Slow-Cooker Chicken Stock

1 chicken carcass or chicken bones
1 onion, quartered
2-3 cloves garlic, whole
1 carrot, rough chopped/baby carrots/slices
1 stalk celery, cut in thirds, plus the celery leaves
black peppercornsfresh parsley
bay leaf

Optional:
leek
additional herbs like thyme
lemon
ginger

Put all the ingredients in your slow-cooker or Nesco, cover with cold water. Start on highest setting, bring up to a boil. Then slow-cook at least five hours on high or overnight on low.
Let cool but while still warm remove the carcass. Pour the broth through a wire strainer. Store in fridge up to five days or freeze. You can season with salt right away or wait until you use it in a recipe. The fat will rise to the top and harden, skim it off before using.

Nesco Roaster Oven

 Does anyone have one of these? It's a Nesco Roaster that does it all! Bake, roast, steam, slow-cook. My Mom uses it to cook ribs, occasionally bakes lasagna in it, and has even baked a cake in it on a camping trip. This is what I use to make the chicken stock in the slow-cooker mode. It's versatile and handy to have. My Mom has a small one and a big one.  

Nesco isn't paying me to say this(but I wish they would!).

Great way to make chicken stock full of flavour. I don't have a crockpot but still I can make it in a saucepan.

Unfortunately I don't have a Crockpot, but I love home made stock, I make it in a normal pot. It's a whole different story. My mother never bought it in a store, I sometimes do.

I use a normal pot to make the chicken stock....as soon as you start making your own stock, then you don't like the ready-made powder!

Fantastic. Because I cook chicken a lot for Nigerian-type stews, I always have some delightful stock leftover which I freeze and use in other recipes

I always make my own stock too. I collect bones in the freezer until I need them and haven't used the store-bought stuff in years! I agree that it's so much better.

Wish I had one of those. I made chicken soup today. The whole house has been sick this weekend! I could have pulled it off yesterday rather than today If I had one of these babies!

My favorite way to make stock is in my slow cooker. I sometimes through in the whole chicken and use it for salad or fillings. So easy and the house does smell great. ;-)

Sweet! Another recipe I can use for my crock pot. I've been thinking of making my own stock for a while now. Definitely a money saver from buying all the boxed and canned version. I'm sure it's way healthier,too. I'm saving this.

I usually make my stock all day long on the stove in a HUGE stock pot. But when I have a lot on the stove...a slowcooker sounds like a GREAT idea. And the meat and bones get sooo very tender. Great idea. Never heard of the Nesco Cooker...Crockpot brand is popular here. But say...I was just thinking...your recipe is so very timely with Canadian Thanksgiving and then American Thanksgiving around the corner... Good time to make stock from turkey bones!

Great idea for the crock pot!

When I make stock, I usually make a gallon or two at a time. But given how simple this method is, I could probably make stock without thinking twice.

The kitchens at school would make huge vats of chicken stock in the morning and man did it smell heavenly. It is right up there with bacon.

I lOVE the crockpot stock idea! Why didn't I think of that. Makes it soo easy and I always have celery that needs to be used up. I'm having turkey legs tomorrow. I'm saving those bones and gonna give it a try! Ineed a money saver!

and 2) Any ideas for a good homemade tomato/ spegetti sauce without the meat? Like a sauce you can use for spegetti, pasta, meatballs, tacos, etc...

I've been making stock in my crock pot for years and it's THE BEST way of doing it. I have a 5 quart bowl and I can get two carcasses in there at at time. It's so efficient and I feel OK about leaving the house with it on.

I just posted a chicken stock also but I did it, in a pot. I do make it, sometimes, in my crock pot.

We are thinking the same way. Just throw in the chicken and some veggies --- can always add later and cook. Then eat that delicious, warm, healing soup.

They've got part of the sequel online. It sounds like the old one, but it's got new characters...I'm not sure what I think. I wouldn't want anyone doing sequels to my stuff, but the heirs of the Pooh estate love it.

It certainly makes sense to make stock in a crock pot doesn't it? As it needs to simmer all day! Making stock seems to make a house a home.
