
Two of my favorite Christmas cookies are Pecan Sandies and Pfeffernussen. I have been eating and making Pecan Sandies as long as I can remember. Everybody loves them. They are really just buttery dough balls with nuts and lots of sugar. They melt in your mouth. It's hard to stop at one. They are truly addicting. My second favorite is Pfefernussen. A soft, spicy cookie that is reminiscent of a gingerbread. It wouldn't be Christmas without either of these. What's your favorite Christmas Cookie?

Pecan Sandies
(by Reeni's Mom's Friend)
1 cup butter, softened
½ cup confectioners’ sugar
1 teaspoon vanilla
2 and ¼ cup flour
¼ teaspoon salt
1 cup chopped Pecans or Walnuts
1. Beat butter, sugar and vanilla together in a medium bowl until fluffy. Add flour and salt. Mix well.
The dough may be too thick to use a mixer at this point. Use a spoon. Add nuts and continue mixing until incorporated throughout.
2. Chill dough for ½ hour.
3. Preheat oven to 400 degrees.
4. Roll dough into 1-inch balls.
5. Bake on ungreased cookie sheet for 10-12 minutes until set but not brown.
6. While still hot roll in confectioners’ sugar. Cool. Then roll again in confectioners’ sugar.

These must be so great! I still haven't decited what kind of cookies I will bake for Christmas, but gingerbread cookies are one of my favorite as they bring the right Christmas feeling at home! :)

Does sounds and look gorgeous and the funny thing is that I have the feeling that your pfeffernussen are our pepernoten, or at least they are probably similar. We have them a lot around Sinterklaas which is celebrated on december 5th. They are very small about the size of a button I would say and are eaten a lot but only at that time of year!
I love Christmas cookies! Pecan sandies are some of the best. I think my favorite cookie has to be those tri-colored rainbow cookies. They aren't Christmas-specific, exactly, but are super delicious nonetheless.
Oooooh my ... like my cookie list isn't long enough already! But then again, these are so simple, so elegant and (based on my memory of them) oh so delicious!

Heh, pecan sandies are my moms favorite too. You know, I can't remember the last time I had a tray of Christmas cookies in front of me, so I'm not really sure what my favorite is. I'm going to have to say Rolo cookies. Heh.

I haven't had all kinds of the X'mas cookies, so can't tell what my favourite is.
I love Christmas time for all the cookies, smell of cinnamon and honey that have always characterized my mom's Christmas baking.
I've already made 10 differet types of cookies, but my absolutely favourite are Orange Blossom Cookies, they disappear at lightspeed. If I take them to a party, people finish them off even before they start eating savoury stuff.

These pecan sandies look amazing! I love cookies that full of butter :) My favorite christmas cookie is not really a cookie. It's a buckeye...the best thing to come out of Ohio...haha. Basically peanut butter balls dipped in chocolate.

Pecan Sandies were my grandmother's favorites! I haven't had one in ages. are the Pfeffernussen like the itlania almond cookies?
Both of the cookies look beautiful and I certainly do love pecan sandies! However, chocolate is a must for me so I would have to say that peanut butter blossoms are my favorite and then maybe the thumbprints with jam filling.
