Side Dish Showdown

Roasted Cauliflower w/ Bacon & Parmesan


I was pondering side dishes, and came to the conclusion that I have overlooked them for far too long. They are worthy of more attention. They can perk up a meal, shed light on an unappealing vegetable, and sometimes even steal the show. I was playing around with the idea of starting my very own once-a-month food blogging event featuring side dishes as the star. To test the waters here are two of my favorites. The first is a creation from my Mom. Potatoes, onions and Brussels sprouts are pan-fried hash brown style for a crispy and delicious result. Their a terrific combo and I won't eat Brussels sprouts any other way. The second is oven-roasted cauliflower with bacon, garlic and Parmesan. Talk about melt-in-your mouth. I can seriously eat a whole pan of these for dinner, nothing else is needed or even desired. These are the show-stealers I was alluding to earlier that truly deserve your undivided attention. Hash Browns & Brussels Sprouts


Hash Browns & Brussels Sprouts

Canola or Vegetable oil, for pan-frying
1 large yellow Onion, thinly sliced into 1-inch pieces
4 cups Potatoes, diced 1/2 inch cubes
Sea salt and fresh pepper
2 cups Brussels Sprouts

1. In a large skillet or saute pan add enough Vegetable oil to generously cover the bottom. Heat the oil on medium and add the potatoes and onions. Season with salt and pepper.

2. Let cook until golden brown, then turn, allowing each side to cook to a golden brown.

3. In the mean time lightly steam the Brussels sprouts.

4. Slice the Brussels sprouts in half.

5. When the potatoes are golden brown and tender push them to the side of the pan. Add a tiny bit of oil to the center and the Brussels sprouts cut side down. When the Brussels sprouts are lightly toasted toss with the potatoes. Taste and re-season with salt and pepper if needed.

Roasted Cauliflower w/ Bacon & Parmesan

1 head of cauliflower, washed and cut into florets
5 cloves garlic, minced
6 slices bacon, chopped
2 tablespoon Olive Oil
1/3 cup Parmesan Cheese, grated
Sea Salt and fresh pepper

1. Preheat oven to 400 degrees.

2. In a large bowl toss everything together using your hands making sure to coat the cauliflower well with the oil. Add the Parmesan, season with salt and pepper and toss again.

3. Add to a 9x13 baking pan(line with aluminum foil/non-stick spray for easy clean-up) and spread out evenly.

4. Roast for 35-45 minutes or until cauliflower is tender and toasted.

Hm, I'm not a big brussel sprout fan, but I would totally try them like that! I'm all about roasted cauliflower with bacon too. But that's not very surprising. :D

We have the psychic mind meld! I cleaned and cut up a head of cauliflower a little bit ago and then couldn't decide what to do with it. Now I know.

I think the once a month side dish idea sounds great! There isn't enough focus on a part of the meal that typically calls for two at one sitting. Both recipes look very good!

Hey Reeni The sides look absolutely awesome. I'm not a big fan of meat, and it is not unusual for me to order two or three sides for as my main course. The sprouts and taters are my pick for sure!

I am definitely definitely definitely interested in a blog event based on sides. I used to be SUCH a sides person but now have just started including the veggies in my main meal. I have SO many veggie side recipes bookmarked though that I want to get back into making them!

I love brussel sprouts lightly steamed and then sauteed with olive oil, garlic, red onion and lemon. I can't wait to try them with tater tots. Maybe I can even get my man on board with the sprouts with the addition of the potatoes.

So, this is a difficult choice - I'd take the sprouts without taters, and the roasted cauliflower is calling my name. I've been eating crispy browned sprouts for a while now but haven't picked up cauliflower yet. Will be making that SOON. :)

Side dishes are not something I've ever concentrated on and most times my side dishes are not very creative.

Mmmm I made the cauliflower tonight and WOW! So tasty! Also, the little bits of bacon and browned garlic are addictive. I added a few sprigs of fresh thyme in while roasting, which was a nice (subtle) touch.

Reeni, I wanted to thank you. I happened upon your blog from a link on another blog--a very fortuitous thing. I had a cauliflower, but wanted a main dish with it so I made your roasted cauliflower, and cooked some rigatoni, adding some chicken broth, olive oil, a little butter, and some red pepper flakes to that, then added the cauliflower. It instantly became a permanent family recipe. All four of us just loved it, it was hard to stop eating! Now I need to go through all your archives because there is treasure in there. By the way, I had the greatest cat ever, all white, and her name was Moon. She actually taught herself to use the toilet. My daughter and I were standing in the kitchen, and we heard this tinkling noise in the bathroom, and we looked at each other--who is that?! And there was Moon on the toilet.
