Overnight Cinnamon Rolls

I baked cinnamon rolls from scratch for the very first time over the holidays, something I have been wanting to do for a very long time. I used Alton Brown's 'overnight' recipe that calls for preparing them the day before and baking them off in the morning. I loved the comforting feeling upon waking up and having them there waiting for me to pop into the oven. Such convenience. And then to have the entire house fill with that welcoming smell of cinnamon dough was blissful.

But in all honesty I wasn't 'wowed' by them the way I wanted to be. The roll itself was kind of bland - even after I had doctored it up by adding Cinnamon right into the raw dough. If you know me - you know I have a hard time following a recipe exactly as written. I also added chopped walnuts to the filling which was a delicious touch and doubled the icing recipe also adding more cinnamon (because you can never have too much of a good thing) and a dash of vanilla.

I was looking for something extra special; something to impress; and these failed to do that for me. Don't get me wrong I wouldn't refuse one if offered. They weren't terrible tasting or anything, but I won't make them again. They did solicit "oohs" and "mmms" from family members. And I'm happy because I can finally cross them off that long 'to do' list of mine...

My changes:

-Add one teaspoon of Cinnamon to the dough at the beginning along with the butter and eggs.

-Sprinkle a cup of chopped walnuts over the cinnamon filling before rolling up.

-Add a 1/2 teaspoon of cinnamon and a dash of vanilla to the icing. Double the icing recipe if you like a lot like I do!


Red Ape Cinnamon


I have to give a shout-out and a thank-you to the generous people over at Red Ape Cinnamon who sent me this cute little jar of cinnamon to try out. I have been using it in everything (they don't call me Cinnamon Girl for nothing) sprinkling it in my hot tea, oatmeal, and Greek yogurt. I used it for all my holiday baking including my Butterscotch Blondies. Red Ape Cinnamon is a robust Korintje cinnamon from Sumatra and is sustainably harvested from Cassia Cinnamon trees that are at least 20 years old. The Volatile Oil (V.O.) content is much higher in older trees resulting in a higher quality cinnamon. The best part is that 5% of profits from sales of their cinnamon is donated to programs dedicated to the protection and restoration of orangutan (a.k.a. The Red Ape) habitat in Indonesia.

I think all cinnamon roll dough is generally bland. It's the topping and filling that makes them, in my opinion. But if your family liked them, chalk one up for you. The photos are so wonderful, it's hard to imagine they were so so.

i have actually had that same thing with many cinnamon roll recipes. i have never found one that I adore, though I did one with cinnamon, cardamon and golden raisin filling that was alright.

I received some of that cinnamon, too several months back. I really love the taste of it. As for those cinnamon rolls. i don't know if I can wait overnight, but then again it's from Alton Brown, so I can I can give it a shot.

Well even if they did not taste like you thought they should, they turned out beautiful!!!
I found that a recipe I used was bland too.
Nothing a little more salt,sugar and butter can't fix! :)

Sorry to hear your cinnamon rolls were disappointing to you. Do you normally like cinnamon rolls? I am a huge fan. I would likely eat them every day if that wouldn't lead to me weighing three hundred pounds! lol They sure look beautiful, and I saw that episode where he made them. Generally, the dough doesn't seem to have much going for it flavor wise. It's the texture that always matters to me along with the cinnamon filling and the icing. I'm pretty sure I would have been oohing and ahhing right along with your family.

i must say... the words "overnight" made my ears perk up (moreso than usual) for this post! i love having something made from scratch, just ready to go the next day! soooooooo nice to be able to just bake off and enjoy! sorry they weren't what you wanted them to be... i sure know how that feels. but it does look finger-licking good... especially with that icing! MMMMM!

I remember seeing this episode of Good Eats and absolutely drooling. They looked like a lot of work, and I was intimidated, but I loved how they looked (and how I imagined they tasted). They look divine. I can tell you did the recipe justice even if it didn't live up to your expectations.

I hate it when things fail to satisfy my expectations. But if it's a consolation, they do look marvellous.
I've checked the recipe, and wow, that's a whole lot of eggs in the dough, the one I'm using is without eggs, and still it tastes great (last time I made them, I sweeped half a pan within few hours ;)))

Well, they LOOK incredible. Maybe making a cardamom-flavored dough (like for my Swedish tea ring) would give them an extra kick, as it would contrast with the cinnamon?

I would definitely take one anyday though!

Kind of relieved to hear you weren't that impressed with these...they LOOK fantastic, and I am trying to avoid temptations like this at the moment. Somehow knowing you weren't crazy about them makes them a bit easier to resist.

Sorry to hear you weren't immediately wowed by these. I made them for a bake sale a couple of years ago and actually quite enjoyed them, but I agree that a little extra something something always helps dough. I think next time I might do a little grated orange peel as I think it goes quite nicely with cinnamon.

I have a brioche bun recipe that I use for my sticky buns which is packed with flavor, but they are also tremendously rich and fatty.

I do thoguh think that as cooks we are often our most judgemental critics. I can seem to pick apart any dish I make only to get rave reviews from others.

Reeni Those Look EXCELLENT !

I put vanilla puddin mix and also vanilla extract in. that's what adds that missing dimension of flavor. this makes them more like the cinnabon taste. I make a sweetdough with the additional ingredients - in the breadmachine; put it into a plastic bag in the fridge overnite to flavor and coldproof. that seems to make the difference for me. I also use the same egg/challa dough to base my pecan cinnamon rolls. the same dough is also used in my monkey bread. I made croissants for the third time this week lastnite. this time hubby left me one. ;]

Reeni, Sorry they didn't wow you, but they look fabulous. If you want more of a bang, try making a dried fruit/nut filling instead of just nuts. It makes a difference.

Bummer that they weren't quite up to par. I've made a few cinnamon roll recipes now and really think I prefer the no yeast one. Crazy, right? But it was sooo good AND easy! Like you though I wouldn't pass up one of your cinnamon rolls and certainly NOT with double glaze! :)

those look incredible! Ive only made cinnamon rolls once. But I think I like the idea of being able to bake them in the morning like that. Mine were so time consuming that I would've had to get up at 4 am to have them for breakfast LOL
