Stuffed Cheese Burgers with Peppers, Onions & Basil Garlic Mayo

On the menu today is a mouth-watering burger recipe with a surprise in the middle! The burgers are filled with two kinds of cheese and topped with fried green pepper and onion strips and a dollop of basil garlic mayo. It’s all kinds of wonderful! Incredibly juicy, tender and completely delicious.

I used a mix of extra sharp cheddar and Monterrey jack for the filling. Cheese is such a flexible ingredient that you can use whatever suits your fancy. Pepper jack would be nice or a smoked provolone or mozzarella. The aioli is made with garlic, lemon, fresh basil and mayo. It adds a nice zesty brightness to the burger. A little pungent, a little sweet and lots of flavor.

In a few easy steps you can take a dull, run-of-the-mill burger and give it pizazz. Something we can all love and appreciate in a burger!

Stuffed Cheeseburgers with Fried Peppers, Onions & Basil Garlic Mayo
(by Reeni)(makes 3 burgers)

2 cloves Garlic
1/2 cup Mayonnaise (like Hellmann’s or Best Foods)
1/3 cup Fresh Basil leaves, chopped or cut in a chiffonade
2 teaspoons Lemon Juice
Salt and Black Pepper
1 pound 80-85% Ground Beef or Ground Turkey
Olive Oil, for sauteing
1 Green Bell Pepper, cut into strips
1 Yellow Onion, thinly sliced
3 ounces Extra Sharp Cheddar and/or Monterey Jack Cheese, shredded or sliced
Hamburger Buns or Rolls

1. Make the flavored mayonnaise by pureeing the garlic and mayo together in the food processor or by mincing the garlic and whisking into the mayo. Whisk in basil and lemon juice. Season to taste with salt and pepper. Refrigerate until serving.

2. To make the patties divide the meat into 3 equal pieces. Divide each piece in two – one piece being slightly bigger than the other. Use the bigger portion to make a patty and press the centers in to carve out a bowl. Make a ‘lid’ to fit the bowl with the smaller piece. Fill the bowls with cheese and put the lids on pressing the seams together well to form the burger. Season well with salt and pepper.

3. Heat a large saute pan or skillet over medium-low heat, cover the bottom with oil. Fry the peppers and onions until tender and browned. Season well with salt and pepper.

4. Meanwhile, cook the burgers any way you desire.

5. Serve on buns topped with peppers/onions and basil garlic mayo. Slice in half using a serrated knife to allow the cheese to cool off before biting into. There is a danger of being burned on the molten and steamy cheese.
