Blueberry Corn Salsa for Meat, Chicken or Fish

Blueberries and corn.

An unlikely combination you don’t often see together and your first clue this might not be your everyday salad.

Would you believe me if I said the combination is full of potential?

One salad. Three possibilities.

Grilled corn, tomatoes, red onion and blueberries are all gussied up with honey, lemon, olive oil and fresh herbs. The summertime flavors come together quickly and easily for a side dish or can be used like a relish to liven up steak, chicken, fish and even tacos. Yes, I said tacos! As in shrimp, fish or chicken tacos.

Take it one step further by throwing in a few diced jalapenos and you’ve got yourself a party salsa!

It’s a flavor explosion that touches on all the flavor bases and is full of complementing textures. Turns out blueberry and corn is not such a crazy idea after all!

No matter how you chose to serve it. Or what you chose to call it. It  deserves a special place on your summertime menu!

Blueberry Corn Relish for Meat, Chicken or Fish
Blueberry and Corn Salad, Salsa or Relish

3 ears of corn, grilled, kernels removed
1/2 cup red onion, diced
1 + 1/2 cups vine-ripened tomatoes, diced
1 + 1/3 cup fresh blueberries
1/4 cup fresh basil or cilantro, chopped
2 tablespoons olive oil
1 tablespoon fresh squeezed lemon or lime juice
2 teaspoons honey
sea or Kosher salt and fresh black pepper
2-3 jalapenos, seeded and diced, optional

Add corn, red onion, tomatoes, blueberries and basil to a large mixing bowl. Add jalapenos too, if using.

In a separate small bowl whisk oil, lemon juice and honey together. Season well with salt and pepper. Taste and adjust flavor by adding more lemon juice or honey if desired.

Pour over salsa and gently toss. Taste and season with salt and pepper.

Serve as a side dish or at room-temperature over steak, chicken or fish. Can also be used as a salsa for chips. Refrigerate leftovers.
