Whoopie pies are a delicious Amish tradition. They get their name from kids and farmers who, upon spying these sweet little treats in their lunch pails would shout out for joy “whoopie.”
What a delectable way to use up leftover cake batter! I have to hand it to the Amish Moms on this one, they did good. My Mom still raves about the pumpkin whoopie pie she ate in Pennsylvania Amish Country many years ago. She fondly remembers it as the best she’s ever eaten. Until now!
This is a heavenly delicious recipe! Crave-worthy. The filling is rich and very sweet. Eating just one satisfied my nagging sweet tooth, no problem.
I refrigerated mine because the humidity was melting everything in sight. The cookie stays soft in the fridge and the filling takes on an ice-cream like consistency and flavor. Filling them with ice cream would be a cool, refreshing summer-time treat.
The cookies on their own are pretty fantasatic too; soft and chewy, just the way oatmeal cookies ought to be.
