Bacon, Sour Cream and Dill Potatoes

Roasted new potatoes tossed in a warm sour cream sauce with bacon, garlic and dill.

I couldn’t resist sneaking in one more roasted vegetable recipe before grilling season starts! Especially since you can opt to grill them instead of roasting because the sauce gets added last.

I used a type of baby or new potato called a creamer potato. Creamer potatoes are a little bigger than a new potato but still a lot smaller than a normal sized potato. Usually you can find red ones or Yukon gold varieties. For this recipe I used a mix of both.

First the potatoes are roasted with olive oil, salt and pepper. The hot potatoes are then tossed in the creamy sauce made stove top. Sautéed garlic in butter mixed with sour cream, crumbled bacon and fresh dill make the sauce tangy, salty and savory with sweet notes from the fresh herbs.

If you can’t find creamer potatoes substitute new potatoes; use more of them and adjust the roasting time.

Bacon, Sour Cream and Dill Potatoes

Roasted new potatoes tossed in a warm sour cream sauce with bacon, garlic and dill.

Ingredients

20 (roughly) creamer potatoes
2 tablespoons olive oil
coarse salt and fresh black pepper
6 slices bacon
2-3 tablespoons butter
4 garlic cloves, minced
2/3 cup sour cream
2 heaping tablespoons fresh dill, chopped

Instructions

  1. Preheat oven to 425 degrees F. Grease a roasting pan or baking sheet lightly with olive oil. Toss potatoes in 2 tablespoons oil and spread out in pan. Sprinkle generously with salt and pepper. Roast until fork tender about 25-30 minutes.
  2. Meanwhile in a large skillet cook bacon until crispy; remove to a paper towel lined plate to drain. When cool to the touch crumble or chop.
  3. When potatoes are done drain grease from pan. Heat butter over medium-low heat; add garlic, season with a pinch or two of salt and saute until fragrant 2-3 minutes.
  4. Stir in sour cream, dill and bacon, turn off heat. Add potatoes and toss well. Season to taste with salt and pepper.
  5. Serve immediately.

  5. Dill on potatoes has got to be one of the best combos. And also bacon. And sour cream. Somehow the dill makes this feel light, whereas the sour cream and bacon can make it feel heavy. It’s a good effect!
