Blondies bursting at the seams with banana, butterscotch chips and walnuts!
They’re a little more cake-like than a traditional blondie but the difference ends there. All the flavors a blondie is loved for are present including the delectable richness of brown sugar. They have a moist, rich texture and an element of ooey-gooeyness to the middles that is completely delicious.
Banana, brown sugar and butterscotch is one dangerous combination! They really should come with a warning stating how highly addictive they are. An entire pan completely disappeared without a trace from my kitchen in less than a day. It must of been kitchen elves. . . greedy albeit very hungry kitchen elves.
These emit a glorious aroma that ranks up there with the intoxicating smell of baking bread. If you’re craving a blondie these will fix you right up!

- Preheat oven to 350 degrees F. Butter an 8×8-inch deep-sided baking pan or line with parchment paper for easier cutting.
- In a small saucepan melt butter over low heat, add brown sugar and stir just until melted, remove from heat, cool to lukewarm and pour into a large mixing bowl.
- Meanwhile, in a separate bowl whisk flour, baking soda, salt and cinnamon together. Beat egg and vanilla into cooled butter mixture, stir in banana, then flour mixture, then butterscotch chips and walnuts.
- Pour into prepared pan, bake 35 minutes. Cool thoroughly before cutting into squares, wiping knife clean after each cut. For easier cutting refrigerate 1-2 hours.
