Blueberry and Corn Salsa

Blueberries and corn.

An unlikely combination you don’t often see together and your first clue this might not be your everyday salsa.

Would you believe me if I said the combination is full of potential?

Three possibilities depending on whether you use it as a salsa, relish or salad.

Blueberry Corn Salsa
Grilled corn,  blueberries, jalapenos, red pepper and red onion are all gussied up with lime and cilantro. The summertime flavors come together quickly and easily for a chip dip, side dish or topping to liven up steak, chicken, fish and even tacos. Yes, I said tacos! As in shrimp, fish or chicken tacos.

Turns out blueberry and corn is not such a crazy idea after all!

No matter how you chose to serve it, or what you chose to call it. It deserves a special place on your summertime menu!

Blueberry Corn Salsa

Summertime flavors come together quickly and easily for a chip dip, side dish or topping to liven up steak, chicken, fish and even tacos.

Ingredients:

1 pint blueberries, washed and dried
2 ears corn, kernels removed (fresh or grilled)
1/4 cup diced red bell pepper
1/4 cup diced red onion
1 tablespoon diced jalapenos, seeds and ribs removed
the juice of 1 fresh lime
1 tablespoon fresh chopped cilantro (or basil or parsley)
salt and pepper to taste

Instructions:

  1. Toss the blueberries corn, pepper, red onion and jalapenos together in a large bowl.
  2. Add the lime and cilantro, toss again, season to taste with salt and pepper.
  3. Refrigerate. Best eaten the day it's made.

    If you say the combination is full of potential then I for one absolutely believe you!!! 

    I’m trying to imagine the juicy plump blueberries “popping” alongside the charred corn and I get all tingly inside. I’m definitely not ruling this one out, Reeni. I believe, I believe…
