Blueberry and Corn Salsa

Blueberries and corn.

An unlikely combination you don’t often see together and your first clue this might not be your everyday salsa.

Would you believe me if I said the combination is full of potential?

Three possibilities depending on whether you use it as a salsa, relish or salad.

Grilled corn, tomatoes, red onion and blueberries are all gussied up with honey, lemon, olive oil and fresh herbs. The summertime flavors come together quickly and easily for a side dish or can be used like a relish to liven up steak, chicken, fish and even tacos. Yes, I said tacos! As in shrimp, fish or chicken tacos.

Take it one step further by throwing in a few diced jalapenos and you’ve got yourself a party salsa!

It’s a flavor explosion that touches on all the flavor bases and is full of complementing textures. Turns out blueberry and corn is not such a crazy idea after all!

No matter how you chose to serve it. Or what you chose to call it. It deserves a special place on your summertime menu!

Sounds like a refreshing salad and I love you put your own twist by adding blueberries in it.  :)  I’ll give this a try as I’ll be starting my grill tomorrow.  Will make extra grilled corns to make this salad.  Thanks for sharing and have a wonderful weekend.
