Turns out blueberry and corn is not such a crazy idea after all!
No matter how you chose to serve it, or what you chose to call it. It deserves a special place on your summertime menu!
Summertime flavors come together quickly and easily for a chip dip, side dish or topping to liven up steak, chicken, fish and even tacos.
- Toss the blueberries corn, pepper, red onion and jalapenos together in a large bowl.
- Add the lime and cilantro, toss again, season to taste with salt and pepper.
- Refrigerate. Best eaten the day it's made.
