White Chocolate Cherry Cashew Cereal Bars

Dried cherries, cashews, white chocolate, coconut flakes and multi-grain Cheerios come together to make these chewy bars that are held together with honey and egg whites. You can use any kind of cereal you like and swap out the white chocolate for any type of chocolate your heart desires. Dark chocolate would work nicely too.

This is the result of cupboards overflowing with dried fruit and nuts stock-piled for Christmas baking that went unused. And teenage nephews who leave half eaten boxes of cereal behind in their wake. I can’t stand to see them abandoned that way.

Especially when I can easily turn them into something completely different.

Something I actually like, because cereal doesn’t appeal to me much. Unless it’s Kashi Honey Sunshine. Love that stuff.  And no, they didn’t pay me to say that.

These have  to be healthier than packaged bars. Even with a few handfuls of white chocolate chips thrown in. For a subtle touch of sweetness.

They walk a fine line between being tart and sweet as well as chewy and crunchy with a nutty, oaty flavor. In other words, everything you could ever wish for in a cereal or snack bar.

Fruit + nuts + chocolate = one of the greatest combinations. Ever.


 

White Chocolate Cherry Cashew Cereal Bars

White Chocolate Cherry Cashew Cereal Bars

Dried cherries, cashews, white chocolate, coconut flakes and multi-grain cheerios come together to make these chewy bars that are held together with honey and egg whites.

Ingredients

butter or vegetable oil, for greasing the pan
flour, for dusting pan
2 cups cereal, coarsely chopped (I used Cheerios multi-grain)
3/4 cup cashews, coarsely chopped
2/3 cup dried cherries, coarsely chopped
1/2 cup organic coconut flakes
2/3 cup white chocolate chips
2 tablespoons whole wheat flour
1/3 cup honey or brown rice syrup
2 large egg whites, room temperature
1/2 teaspoon salt
1/2 teaspoon vanilla extract

Instructions

  1. Heat oven to 300°F. Line an 8x8 baking pan with parchment or foil, grease and flour.
  2. In a large bowl mix cereal, cashews, cherries, coconut, chocolate chips and flour.
  3. In a separate bowl whisk together honey, egg whites, salt and vanilla. Pour over cereal mixture and combine well.
  4. Add to the baking pan and pat down evenly and well using your hands.
  5. Bake about 45 minutes until bars are dry on top and light golden around the edges. Cool completely, lift out of pan and slice with a serrated knife into bars or squares.

    Love this!! Definitely going to make it, but probably will use cranberries instead (Only Because I already have them)
    Do you think Taking out the white chocolate chips will affect it any, as far as texture or holding together well?

      Hi Jessen! I would add extra cereal in its place because you might have too much liquid. The texture will be fine. Let me know how they turn out!
