Tender rotisserie chicken comes together with bacon, avocado, grilled corn and romaine lettuce in a honey lime vinaigrette to make this bright and tasty salad. This makes a great main dish that won’t make you feel like you’re missing out on anything because you’re eating a ‘salad’ for dinner.
Some people have a hard time thinking of salad that way. You know, as dinner food. Those very same people want meat and potatoes every single night and groan at the sight of a salad. . .they might even open the oven door even though it isn’t even turned on and ask where’s the meat? I bet you know someone like that.
This salad is different.
It’s not your typical garden salad. Just looking at the grilled corn, crispy bacon, avocado and tender chicken you can see why. Salty, buttery, savory and sweet all at the same time with a subtle hint of smokiness from grilling the corn plus the bite of sour lime and fresh cilantro in the dressing. I love these flavors together.
If you don’t happen to have leftover cooked chicken on hand or maybe a rotisserie chicken then you can grill some right along with the corn. Make sure you get a nice char on your corn because char is flavor. If you happen to be reading this in the middle of winter when fresh corn is out of season then you can use frozen corn and get some nice color on it in a cast-iron skillet.

- Grill the corn over medium heat turning to char on all sides. Remove - when cool enough to handle cut the corn from the cob.
- Meanwhile make the dressing by whisking the lime zest, juice, mustard and honey together in a small bowl. Slowly drizzle in the oil while whisking and continue whisking until creamy. Mix in the cilantro and salt and pepper to taste.
- Divide the romaine between two plates, drizzle with dressing, top with the chicken, corn, avocado and bacon. Drizzle with more dressing and season to taste with salt and pepper.
