There’s something about a chopped salad I adore. A salad cut into a million little pieces so just about every single bite includes the sum of its parts. For that perfect bite. Best when there’s a mix of sweet, savory and salty flavors as well as soft, crunchy and chewy textures.
This chopped salad has all of that going for it and more with bosc pears, sliced almonds, dried cranberries, couscous, feta cheese, cucumbers, tomatoes, baby spinach and romaine tossed together in a honey mustard dressing. Your taste buds will scream happiness.
All the measurements are estimates. A salad like this doesn’t need precision to work. When I say “to work” I mean it’s everything you could ever want in a salad.
Delicious and satisfying. A pure pleasure to eat.

Instructions
- In a large bowl toss all the salad ingredients together except the almonds.
- Whisk the dressing ingredients together in a small bowl. Season with salt and pepper to taste.
- Add the dressing a little bit at a time and toss well. You may find that you don't need it all. Serve immediately with almonds scattered over top.
