Cranberry Apple Walnut Chicken Salad

Romaine salad with chicken, apples, dried cranberries and walnuts in a honey-mustard dressing.

It has all the elements I like in a satisfying salad including a full array of competing flavors and textures that all meld together in a completely delicious way.

Every bite reminds me that fall is here to stay awhile and makes me smile wider and wider.

It has a sweet and savory thing going on with crisp and tart apples, chewy cranberries, crunchy walnuts, tender chicken and tangy honey-mustard.

It’s fresh, light and a cinch to throw together for lunch or dinner using rotisserie or leftover cooked chicken.

I don’t know why but lately I haven’t been including cheese in my leafy salads. That’s very unlike me and kind of a shame. You can add it if you like. . . feta, goat cheese, blue cheese, Parmesan or sharp cheddar would all be good.

Cranberry Apple Chicken Salad w/ Honey Mustard Dressing

Romaine salad with chicken, apples, dried cranberries and walnuts in a honey-mustard dressing.


3 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon mayonnaise
1 - 2 tablespoons water
6 cups leafy romaine or mixed salad greens
1 + 1/2 cups cooked chicken, cut in bite-size cubes or shredded (I used rotisserie)
1 large apple, cubed
1/4 cup dried cranberries
2 heaping tablespoons chopped walnuts
salt and fresh black pepper, to taste


  1. In a small bowl whisk the dressing ingredients together starting with 1 tablespoon water and adding more if needed.
  2. Divide the romaine among two plates. Drizzle with dressing. Divide the chicken and apples among each one. Drizzle lightly with more dressing.
  3. Sprinkle the cranberries and walnuts over top. Serve with salt and pepper to taste and any remaining dressing.

    No added cheese?! No problem, i can definitely fix that. I feel like I’ve been on the opposite spectrum and eating TONS of cheese lately. Love the honey mustard dressing in this salad….it’s my favorite kind of dressing!
