Romaine salad with chicken, apples, dried cranberries and walnuts in a honey-mustard dressing. It has all the elements I like in a satisfying salad including a full array of competing flavors and textures that make it altogether delicious. Every bite reminds me that fall is here to stay awhile and makes me smile wider and wider.
It has a sweet and savory thing going on with crisp and tart apples, chewy cranberries, crunchy walnuts, tender chicken and tangy honey-mustard. It’s fresh, light and a cinch to throw together for lunch or dinner using rotisserie or leftover cooked chicken.
I don’t know why but lately I haven’t been including cheese in my leafy salads. That’s very unlike me and kind of a shame. You can add some if you like. . . feta, goat cheese, Parmesan or sharp cheddar would all be good.
