Cranberry Apple Walnut Chicken Salad

A chunky chicken salad packed with chewy dried cranberries, fresh tart apples, crunchy walnuts and the subtle bite of red onion. It’s held together with mayonnaise and a touch of mustard seasoned with sweet dill, salt and pepper. It is the best chicken salad I ever made. Or ate.

The success or failure of any chicken salad, in my eyes, depends completely on the quality of the chicken you use. I used a leftover, roasted, organic chicken that was so tender and juicy it melted in my mouth. You know that saying it melted like butter? This was that chicken. A rotisserie chicken will work well too. Just don’t use dried up, tough, tasteless chicken. Save that for the soup pot. 

This salad is so good stuffed into pitas, as a sandwich filling or on top of a leafy green salad. Once you dip your fork in it to taste it will pretty much own you, whether you planned on eating it right then and there on the spot or not.

It has a wily, I-bet-you-can’t-stop-eating-me-side to it that will suck you right in.

Better double the recipe.

Cranberry, Apple & Walnut Chicken Salad

INGREDIENTS:

1 cup cooked chicken, cut in bite-sized pieces (I like Rotisserie)
1/2 cup diced apple (I used Gala)
3 tablespoons chopped, dried cranberries
2 tablespoons finely chopped red onion
2 tablespoons chopped walnuts
2 - 3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon dried dill
salt and pepper to taste

INSTRUCTIONS:

  1. In a medium bowl toss everything together until well combined. Season to taste with salt and pepper.
  2. Use as a sandwich filling or to top a leafy salad.
