Curried Chicken Salad with Golden Raisins and Almonds

Whenever I find myself craving something a little different, I turn to this curried chicken salad. It never ceases to please.

Packed full of tender bites of chicken, chewy raisins and crunchy almonds, it’s full of sweet and zesty flavors and competing textures that compliment each other well.

The recipe makes just enough chicken salad for one, which works out perfectly if you have leftover chicken and only yourself to feed. If not, the recipe can easily be doubled or tripled.

You can eat this chicken salad in a sandwich, a pita, a wrap or over salad greens.

Curried Chicken Salad

1-2 tablespoons mayonnaise or Greek yogurt
1 teaspoon curry powder
1 teaspoon fresh cilantro or parsley, finely chopped
Sea or Kosher salt and fresh black pepper
1/2 cup chicken, cooked, cut in bite-size pieces
1 heaping tablespoon golden raisins2 tablespoons sliced almonds

In a small bowl whisk together mayonnaise, curry, cilantro and season with salt and pepper to taste. Add chicken, raisins and a tablespoon of almonds, combine. Use as a sandwich or wrap filling or serve on a bed of salad greens with an additional sprinkle of almonds over top.
