To put the baking mix and the pancake pan to the test I made cranberry and pistachio pancakes. Delicious! If I didn’t know they were gluten-free I would of never been able to tell. They taste like what you would expect from a ‘regular’ box mix. I think it’s really great that more companies like this one are coming out with products that make it easier and convenient to bake gluten free. Especially for kids who can’t eat gluten and don’t get to eat pancakes and other baked goods that often. I went gluten-free for six months and baking was real hard. Most of what I made was inedible.

    ooh, that's a tough one. I think I'd make those cinnamon roll pancakes I've seen floating around blog land. :)But honestly? If I won, I'd pass the mix onto my sister who's currently taking lactose out of her baby's diet, and gluten is next.     I would love some pumpkin pecan pie pancakes! Mmm… since being diagnosed with celiac, I've been so deprived of pancakes! Goodness, my mouth is watering just thinking about it! I love the idea of gluten-free pancakes!

    I just found out a week ago I had to go gluten free – I'd love to be able to easily make pancakes and join my family when we have breakfast for dinner some weeknights :)
