Greek Quinoa Salad

A simple summer salad with quinoa, feta cheese, tomatoes, cucumber, red onion and olives dressed in lemon and olive oil with fresh herbs like dill, mint and parsley. All the flavors I crave at this time of the year.

Whether fresh from the backyard garden or the farmer’s market I almost always have them on hand. It makes throwing together a salad a cinch! Whether spur of the moment or planned.

While the quinoa gets to cooking you can work on the dicing and chopping. From there it comes together quickly and makes a great salad to serve alongside grilled chicken, fish or steak. It also makes a delicious and satisfying light lunch.

Or midnight snack.

Greek Quinoa Salad

A simple summer salad full of fresh, bright flavors!


1 cup uncooked quinoa
1 cup diced tomatoes
1 cup diced cucumber
1 cup crumbled feta cheese
1/2 cup sliced kalamata olives or 3/4 cup sliced black olives
1/4 cup diced red onion
1 teaspoon fresh chopped mint
1 teaspoon fresh chopped parsley
1 teaspoon fresh dill
the juice of 2 lemons (3 - 4 tablespoons)
2 tablespoons extra-virgin olive oil
coarse salt and fresh black pepper, to taste


  1. Cook the quinoa according to package directions. Allow to cool.
  2. In a large mixing bowl toss the quinoa, tomatoes, cucumber, feta, olives, onions and herbs together.
  3. Drizzle the lemon and oil over it and toss well. Season to taste with salt and pepper and add more lemon or oil if desired.
  4. Serve chilled or at room temperature.
