Light Green Goddess Dressing Recipe

Green Goddess is an earthy, herb-packed dressing with a tangy bite to it. The dressing is a delight drizzled over salads, chicken, fish or as a dip for crudites.

For this lighter version I swapped out the usual, fatty base of mayonnaise for light sour cream (Greek yogurt works too). The sour cream is combined with buttermilk, lemon juice, vinegar, dijon, scallions, anchovies, garlic and a trio of fresh herbs like parsley, tarragon and thyme.

With this powerhouse of flavors, the mayonnaise doesn’t stand a chance of being missed! The dressing doesn’t miss a beat, remaining rich and creamy.

Green Goddess dressing is the perfect vehicle for putting those herbs still springing forth from your garden to good use, before frost strips them of any and all usefulness.

Feel free throw in whatever herbs you have on hand including mint, cilantro, basil and/or chives in whatever combination your little heart can dream up.

Allowing the flavors to mingle overnight will produce the most delicious results.

Light Green Goddess Dressing

An earthy, herb-packed dressing with a tangy bite to it!

3/4 cup light sour cream or nonfat Greek yogurt
3/4 cup buttermilk
1 tablespoon white wine vinegar
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
3 scallions, rough chopped
2 anchovies, optional
1 clove garlic, rough chopped
1/2 cup fresh parsley leaves
1/4 cup (loose packed) fresh tarragon leaves
3-4 sprigs worth fresh thyme leaves
sea or kosher salt and fresh black pepper, to taste

  1. Add all ingredients except salt and pepper to the bowl of a food processor or blender, pulse until well blended. Season well with salt and pepper, pulse again and taste. Adjust as desired by adding more vinegar, lemon, garlic or herbs; add more sour cream for a thicker dressing or buttermilk to thin it.

-Store in tightly covered glass jar in refrigerator 7-10 days.

What a nice twist on a 70s favorite! I forgot all about the green goddess Reeni! I used to love it atop a fresh pasta salad, yum!

I always forget about this dressing. Nice to see it making a come back – I think I will try it with the yogurt – even though my herbs are very sad these days. I love dressings infused with herbs and your photo is so softly green – you want to taste.
