The Hellmann’s® Chicken Change-Up gives parents “easy recipes to turn every-night chicken into outrageously juicy mealtime favorites”. This is my last post in the Hellmann’s® series and features a twist on the classics.
This classic chicken recipe is a twist on bruschetta. Using chicken breasts or cutlets, a mixture of mayonnaise and parmesan is smeared over top and dusted with seasoned bread crumbs. It bakes up crispy and crusty on the outside and traps all the juices inside making for a tender piece of chicken.
The bruschetta topping of tomatoes, basil and onion (green or red) gives it a light, healthy touch. The bruschetta is versatile making it easy to change up the flavors. Mix in some crumbled feta or goat cheese, chopped olives, additional vegetables or even fruit like mango or avocado.

Instructions
- Preheat oven to 425° F.
- Combine Hellmann's® or Best Foods® Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
- Bake 20 minutes or until chicken is thoroughly cooked.
- Meanwhile, combine remaining ingredients in medium bowl.
- To serve, evenly top chicken with bruschetta mixture.
