Oven-Fried Parmesan Crusted Bruschetta Chicken

This is a classic chicken recipe inspired by bruschetta. Using chicken breasts or cutlets, a mixture of mayonnaise and parmesan is smeared over top and dusted with seasoned bread crumbs. It bakes up crispy and crusty on the outside and traps all the juices inside making for a tender piece of chicken.

The bruschetta topping of tomatoes, basil and onion (green or red) gives it a light, healthy touch. The bruschetta is versatile making it easy to change up the flavors. For a change of pace mix in some crumbled feta or goat cheese, chopped olives, additional vegetables or even fruit like mango or avocado.

Parmesan-Crusted Bruschetta Chicken

The fresh flavors of Bruschetta top perfectly moist chicken.

Ingredients

1/2 cup mayonnaise (regular, light or olive oil)
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
4 teaspoons Italian seasoned dry bread crumbs
2 medium tomatoes, seeded and chopped
1/4 cup chopped red onion
1/4 cup Italian Dressing
1 Tablespoon chopped fresh basil leaves or 1 tsp. dried basil leaves, crushed

Instructions

  1. Preheat oven to 425° F.
  2. Combine the mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
  3. Bake 20 minutes or until chicken is thoroughly cooked.
  4. Meanwhile, combine remaining ingredients in medium bowl.
  5. To serve, evenly top chicken with bruschetta mixture.
