This is a classic chicken recipe inspired by bruschetta. Using chicken breasts or cutlets, a mixture of mayonnaise and parmesan is smeared over top and dusted with seasoned bread crumbs. It bakes up crispy and crusty on the outside and traps all the juices inside making for a tender piece of chicken.
The bruschetta topping of tomatoes, basil and onion (green or red) gives it a light, healthy touch. The bruschetta is versatile making it easy to change up the flavors. For a change of pace mix in some crumbled feta or goat cheese, chopped olives, additional vegetables or even fruit like mango or avocado.
The fresh flavors of Bruschetta top perfectly moist chicken.

This sounds wonderful. I love bruschetta and the chicken itself sounds wonderful. I like the fact that you use the italian dressing in the coating.

Colorful and creative, I like it. At first I was like, “but where’s the bread” until I started reading it. Clever.
Love this! Bruchetta chicken, sounds delicious. I love breaded chicken, and baking is so much better than frying, heh
