I grew up on Hellmann’s® mayonnaise. To this day it’s a staple in our house. My Mom won’t make her famous potato salad without it. People ask for her secret all the time. The secret is in the Hellmann’s®.
These quick and easy chicken breasts get their crunchy coating from Hellmann’s® mayonnaise, parmesan cheese and bread crumbs. For taking mere minutes to throw together the results are impressive. The inside stays juicy, tender and succulent, the coating crispy and flavorful. Everyone wanted to know how I was able to get them so crispy in the oven. The secret is in the Hellmann’s®.
So good this was I ended up making them twice in one week! The first time I used bone-in chicken with the skin on and the result was just like fried chicken. Super crispy and delectable. If you’re looking for an alternative to frying chicken this is the closest thing I’ve found.
The second time I used chicken cutlets. With barely 10 minutes of prep and a 12 minute cooking time they were on the table in record time. I turned the broiler on for the last-minute or two to help crisp them, with a short cooking time they need a little help. I turned the leftovers into chicken parmesan by briefly baking them with sauce and mozzarella on top, then broiling them to get the cheese bubbly and golden brown. Served over pasta, it was a delicious way to reinvent the leftovers.
These take all of 10 minutes to get in the oven and you can use regular, light or light canola cholesterol free Hellmann’s® with your choice of bone-in chicken, chicken breasts, chicken tenders or thin chicken cutlets. To save even more time you can mix the Hellmann’s® with the parmesan cheese ahead of time and store it in your refrigerator until you need it. Good food fast.

- Preheat oven to 425° F.
- Combine Hellmann's® or Best Foods® Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
- Bake 20 minutes or until chicken is thoroughly cooked.

i need recipes for bone in chicken. would this parmesan chicken recipe work on bone in?
Absolutely! It may even be more delicious with that crispy skin on it. You may need to double the amount of ingredients so you have enough to coat the chicken well. I’d love to hear how it turns out.
