Peanut Butter Sesame Noodles

This is a cold noodle recipe with a spicy, Asian-inspired peanut butter sauce. It may sound wierd if you’ve never had anything like it before, but only takes a minute to get used to! If you’re anything like me you may find yourself not only loving them but being overcome with cravings that seemingly manifest out of thin air.

The sticky-sweet, sour and tangy sauce is made by enriching peanut butter with fresh ginger, garlic, soy sauce, brown sugar, rice vinegar and red chile pepper. Everything is whizzed together in a blender until super smooth and creamy. A garnish made of toasted sesame seeds, cilantro and green onion boosts the flavor of the noodles even further. They make the best lunchbox treat and the perfect potluck, barbecue or picnic food.

I love that I can go straight to my refrigerator and nosh on something so satisfying whenever the urge strikes me. Whether it be the middle of the day or midnight; any time’s a good time to eat peanut butter noodles! They never fail to please.

Peanut Butter Sesame Noodles

 Peanut Butter Sesame Noodles

Spicy, Asian-inspired peanut butter sauce smothered noodles.

Ingredients

sea or kosher salt
12 ounces Chinese egg noodles or spaghetti
1 (1-inch) piece fresh ginger, peeled and chopped
3 cloves garlic, smashed
2 tablespoons light brown sugar
1 cup creamy peanut butter
3 tablespoons rice vinegar
3 tablespoons low-sodium soy sauce
red pepper flakes, a dash or two or 1 teaspoon red chile sauce
1 tablespoon toasted sesame oil or vegetable oil
6 tablespoons water
2 scallions, chopped
1 tablespoon toasted sesame seeds, for garnish
fresh cilantro leaves, chopped for garnish

Instructions

  1. Cook the noodles in large pot of boiling salted water over medium heat until barely tender and still firm.
  2. Drain immediately and rinse with cold water until cool. Drain the noodles well and transfer to a wide bowl.
  3. In a blender or food processor add the ginger, garlic, sugar, peanut butter, vinegar, soy sauce, red pepper flakes, sesame oil, and water. Process until the mixture is smooth.
  4. Put the blender jar into the refrigerator and let chill for about 1/2 hour. Pour the peanut sauce over the noodles and toss until well coated.
  5. Serve immediately garnished with the scallions, sesame seeds, and cilantro.
