Every night when my Dad gets home from work he checks the stove to see if we’re cooking meat for dinner. He’s lucky if he gets meat once a week when fresh summer produce is so abundant and irresistible. At this very moment my fridge is bursting with so much produce there is not one inch of space left in any nook, corner or cranny.
In the same way veggies make me happy for my Dad it’s meat. Or beans. Even though he eats just about anything I put in front of him including my vegetable laden creations, they just don’t make his world go around the same way they do mine.
So these ribs had his name on them and his name only. He claims they were tender and delicious, proving it true by devouring every single last one in less than 24 hours and fully satisfying his need for “meat”.
Crisis averted.

Ingredients
Instructions
- Trim excess fat and membrane from ribs. Season well with salt and pepper. Set aside.
- Heat a few tablespoon of oil in a medium skillet and cook onion until tender, add garlic and cook until fragrant. Season well with salt and pepper, add paprika, oregano and chipotle pepper, cook 2-3 more minutes stirring often. Transfer to a medium-sized crockpot.
- Stir tomatoes and vinegar into the onion mixture and season well with salt and pepper. Turn heat up to high. Add ribs. Cook 4 hours on high or 6-8 on low. Taste sauce near the end and season again if needed.
