I don’t look at those languishing boxes and bags of pretzels, crackers and tortilla chips the same way I used to: as half-eaten, forgotten and destined for the trash. I see them for their possibilities. They can be turned into all sorts of sweet and savory pie crusts or used in crumbles to replace flour. Or sprinkled over the tops of casseroles like mac and cheese. Crushed up fine they can replace bread crumbs in just about any recipe. Or used as a coating for chicken, shrimp and even vegetables like fries to make them extra crispy.
And so when I spied a bag of pretzels that needed to be used up I immediately thought of chicken. And peanut butter. Because pretzels and peanut butter love each other. Like Winnie the Pooh and honey.
The crushed pretzels make a delicious, extra crispy crust that can be used on bone-in chicken or boneless breasts. The peanut sauce is made with garlic, soy sauce and ginger. It’s a little zingy and a lot addicting. It’s one of my favorite things in the whole world. I could drink it. With a straw. It’s that good.
