Spaghetti Pie

This recipe for Spaghetti Pie has been with for many years. I made it for the first time when I was in high school for Mrs. Pederson’s cooking class. The theme was pie – we were required to make a savory pie and a sweet cream pie at home. I made this Spaghetti pie and a Chocolate Cream Pie for dessert. I still have the handouts with the pie recipes she gave us. She taught three different cooking classes and I took them all. This is when my love for cooking took root.

I dusted off this recipe to see if it was as good as I remembered. It was. Tastes like lasagna but without all the fuss. It’s fast and easy. If you have leftover sauce and/or spaghetti you have it made. The spaghetti acts as the crust and the filling is Ricotta, Parmesan, Mozzarella and Meat sauce. Pair it up with some garlic bread and/or a salad for a heart-warming, comforting meal. Or if your like me a meal that brings back memories…

Spaghetti Pie

Spaghetti Pie

8 ounces spaghetti
¾ pound of ground beef
1 tablespoon olive oil
small onion, diced
½ green pepper, diced
3 cloves garlic, minced
2 cups tomato sauce or diced tomatoes
1 tablespoon Italian Seasoning
2 Tablespoons butter
1 and 1/3 C. shredded Parmesan cheese, divided
2 eggs, well beaten
1 cup mozzarella cheese
1 and ½ cup ricotta cheese
Cook spaghetti to al dente according to package directions. In a heavy bottomed saucepan over medium heat cook ground beef. Drain off the grease. Push the meat to the sides of the pan leaving space in the center. Add the oil, onion, green pepper, and garlic. Cook for about five minutes then add in tomato sauce and Italian seasoning. Let simmer for about 20 minutes. In a large bowl mix spaghetti with butter, 1/3 cup Parmesan, and eggs. Put the spaghetti mixture in a greased pie dish. Push the spaghetti up the sides of the pan and evenly over the bottom ‘forming’ the crust. Spread ricotta over spaghetti crust and then sprinkle on the mozzarella. Top with meat mixture and the remaining cup of Parmesan. Bake in 375° oven for 20 minutes.
