Bark candy is made from melted chocolate with toppings mixed in or scattered over top. Think of it as candy bars gone wild. After the chocolate sets it’s broken up into irregular pieces and has a rustic, homemade look to it that I love.
These start with a layer of graham crackers followed by melted chocolate, chopped peanuts and mini marshmallows. More chocolate – white chocolate – is drizzled over top. It’s a simple concoction that works.
I dare you to make this and eat only one piece! It’s an impossible feat. I wasn’t expecting them to turn out so hopelessly good and utterly addicting. I created a dangerous situation with graham crackers and chocolate in the house…
This no-bake treat will satisfy your desire for dessert without any fuss! They are perfect to make during the dog days of summer when turning on the oven requires overcoming a fear of melting. And kids will love to help you make them. They will line up to eat them. Even the big ones. Ahem.

- Line a 9×11 or 9×13 pan with parchment, then line with graham crackers, breaking them up if needed to fill in completely. The tighter they fit, the easier it will be to spread the chocolate.
- Melt the chocolate in a double broiler or in the microwave in 30 second increments, stirring in between. Pour the chocolate over top of the graham crackers and spread evenly from edge to edge.
- Sprinkle peanuts evenly over top, then marshmallows, pressing the marshmallows into the chocolate.
- Melt the white chocolate, drizzle over top with a spoon or use a baggie with the tip cut off.
- Refrigerate 1 to 2 hours. Remove and break into pieces. Store tightly covered in refrigerator for crunchy bark or in a cool place for a softer graham cracker.
