Chicken Bowtie Pasta Salad

To celebrate the dwindling days of summer I threw together a pasta salad with leftover chicken, tomatoes and green onions from the garden and bowtie pasta.

Incredibly hearty and delicious – this kind of salad is hard to stop eating!

Serve as a main or side dish.

Chicken Bowtie Pasta Salad

A pasta salad with chicken, tomatoes, green onions and bowtie pasta.

Ingredients

8 oz Bowtie/Farfalle (like Barilla)
½ cup mayo (I like Hellmann’s/ Best Foods)
1/3 cup sour cream
2 tablespoons extra virgin olive oil
2 teaspoons fresh lemon juice
1 cup shredded, cooked chicken (or canned chicken)
1 cup diced tomatoes, seeds removed
½ cup green onion, minced

Instructions

  1. 1. Cook Farfalle according to package directions to al dente. Rinse in cold water to stop the cooking process. If not ready to dress, drizzle and toss with olive oil to prevent sticking.
  2. 2. Meanwhile add mayo, sour cream, oil and lemon juice to a medium size bowl and whisk until combined well.
  3. 3. In a large bowl toss the pasta, chicken, tomatoes, and green onions. Pour dressing over top and toss gently until all the ingredients are evenly distributed and coated thoroughly.

    This salad looks so yummy! Since we average about 100 degrees out here in this horrible desert it's the perfect dish to make without heating up the kitchen. I will be trying this soon!

    Our garden will start winding down in a week or so. The nights are getting cooler, even though it's still in the 80s most days. I think your pasta salad is a great way to celebrate the end of the summer garden!

    I am so sad to see sunner go but then on the other hand my sweetie and I are big skiers and he a snowboarder so we cannot wait for winter. Anyway where was I oh, I wanted to say that I would like to try your pasta because of its creaminess and it seems so light!
