Here is Part Two of the Side Dish Showdown round-up as promised! Enjoy.
Chaya of My Sweet and Savory and The Comfy Cook made three side dishes. Chaya’s first is a Twice Cooked Quinoa with Vegetables, Pecans, Black Beans and Tomatoes.
Her second is a Herb Sauteed Bell Peppers. Chaya would like to know “Who made fun of bell peppers? Boring name but good food.”
Chaya’s third dish are these Oven Roasted Garlic Potatoes. “I think, we are in for a treat, with these potatoes, which must be filled with flavor. This is one of those quick and easy recipes where the most challenging part is washing the potatoes.”
Sanyukta of Creative Sanyukta made four side dishes! Her first is a BitterGourd Stir-fry. Sanyukta says “…my memory lane flourished with sweet memories and food my dad loves….Thousands of recipes started lingering in my mind..I saw whats in my fridge and found this gorgeous fruit distinct warty looking exterior and an oblong shape…BITTERGOURD/BITTERMELON.”
Sanyukta’s second is a Corn Mushroom Carrot Stir-fry. Sanyukta says “I love making veggie stir frys, great option to get veggies in.and make my own variations/addition as per my taste…This dish i created is simple n easy..can adjust the ingredients quantity wise(like mushrooms more,carrot-corn less)can put spices u like or omit some…Tastes great with chapathi, naan, steamed rice, cumin/basil rice, breads or with pasta dishes as a side dish…”
Her third dish is a 3 in 1 Stir-fry with Potato, Cauliflower, Cabbage and Peas. “…sharing with u all 3 simple stirfry’s using the same ingredients…
Sanyukta’s fourth dish is a BottleGourd and Lentils Stir-fry. “Needless to say the benefits of bottlegourd and Lentils in ones diet. My mom makes this veggie into variety of ways, sweet, spicy, savoury into chutneys, dals, stirfrys, sweet puddings, rice dishes. Also with different kinds of dals like orange lentils, whole brown lentils, sometimes liquid preparations and some dry. But i love this simple stirfry with mild spices. Enjoy.”
Swathi of Zesty South Indian Kitchen made a Baked Burmese Eggplant Salad. Swathi says “If you like Indian Baigan Ka Bharta//Roasted mashed spiced eggplant or Middle Eastern dip Baba Ganouj, should try this egg plant salad. They are really good with crunchiness from fried garlic, roasted coconut, sesame seeds and peanuts. It has tanginess from lemon juice, spiciness from paprika and saltiness from soy sauce. We enjoyed this salad as an appetizer for our dinner.”
Carla from The Recipe Addict made Bamies Me Saltsa also known as Fried Okra with Tomatoes. Carla says “It is a Greek Recipe for Okra with Tomatoes. There are a great many of these Bamies posted throughout the internet. Some call for the addition of parsley, while others call for cider vinegar, some just say vinegar. Either way they are very good as a side dish. This recipe is also used replacing the okra with green beans. Very delicious recipe. This was the first time I ever braised vegetables in olive oil.”
Sienna of “Hon, What’s for Dinner?” made Twice Baked Potatoes. Sienna says “I have been on the south beach diet for 3 weeks now…I have to have a cheat day, or I go crazy!!! So, these were my cheat… and they were sooooooooo worth it!”
Debbi of Debbi Does Dinner…Healthy & Low-Calorie made a Quinoa Salad with Apples and Almonds. Debbi says “I have been very impressed with quinoa. I love how filling it is. Just a small amount really does the trick and fills you right up. This cold salad was fantastic! The flavors were perfect together.”
Denny of Oh Taste N See made Roasted Asparagus with Chopped Eggs. It was her first time eating asparagus. Denny says “The spears were cooked just perfect, and I loved its taste. It was a somewhat familiar taste, but I can’t exactly figure out what. The eggs and the lemon juice perked up the taste beautifully.”
A2Z Vegetarian Cuisine made Mixed 5 Lentils Soup also called Gujarati Dal Panchvati. “A single serving of lentils provides sixty percent of the daily quota for iron, a mineral that vegetarians often lack sufficient quantities of. If you’re vegetarian, lentils should be a standard in your diet. Most people don’t get enough heart healthy fiber in their diet and lentils provide an easy way to add fiber. The same soluble fiber found in lentils also helps to moderate blood sugar levels and promote digestive health.”
Prity of Indian Khana made Eggplant Curry. “One Saturday I saw Nags FB status that she is making something with eggplant, I went and checked her site and found the Hyderabad style bagara baigan which was looking simple enough for me to give a try and I’m glad that I did. It tasted yummy…”
The Country Cook from Maggie’s Country Kitchen made Okra Salad. “When I was young Dad always planted a huge garden. I remember one year the garden consumed nearly all of our Atlanta suburban back yard! Dad grew tomatoes, peppers, squash,beans, onions,corn and okra. I am sure there were other odds and ends growing in his garden. I really remember the okra, because he grew so much of it and for many years I did not care for okra cooked any way other than fried.”
Daphne of A Food Junkie in Texas made a Spicy Cilantro and Lime Potato Salad. “I wanted to make a potato salad but not a traditional one. I am not a fan of the mustard-based potato salad so, I came up with this recipe. My son and I really liked it-”
Pam of Sidewalk Shoes made a Sweet and Tart Slaw Dressing. “Have you ever stopped to contemplate slaw? Slaw is kind of weird. I mean, no one ever goes around saying, “Boy, I wish I had some slaw today. And since you are stopping to contemplate slaw, think about all the slaw ramifications. Do you like yours creamy or vinegary? Sweet or sour? With or without onions? Purely cabbage, or some carrots, what about broccoli? See. Slaw is a complex thing. A wonder. (You’re looking at it in a whole new light, now aren’t you?)”
Kim of Stirring the Pot made a Green Bean Salad with Charred Onions. Kim says “Every summer, my Mom plants green beans and we eat them like crazy all through the month of June. Last week was the third picking and we were looking for a new way to serve them up. This green beans grew even more flavorful as they were allowed to soak up some of the tangy, orange-flavored dressing.”
Heather of Girlichef made a Greek Potato, Onion and Caper Salad. “I bought a gorgeous little bunch…if you can refer to potatoes in the term bunch…of multi-colored fingerlings at the farmer’s market a week or so ago and really needed to use them! This particular recipe is fabulous…is packed full of those addictive, salty little bubbles…capers!
I made two side dishes this month for the Showdown. The first is a Greek Creamed Spinach. “This a creamy, delicious classic that your family will love. You can serve it alongside steak…or with anything your little heart desires!
My second is a Panzanella Salad. “This bright, fresh and rustic recipe for Italian Panzanella salad couldn’t be simpler to make or more delicious! It’s as easy as tossing rough cut tomatoes, crusty hunks of bread, sharp red onion, sweet basil and salty Parmesan together. With a little drizzle of olive oil and vinegar over top it’s good to go.”
