Soft Iced Lime Cookies

Lime and sugar are a match made in flavor heaven! They fight it out amongst themselves in these soft, tender cookies.

But let’s face it, no matter who dominates, it’s a win-win situation all the way around!

The sharp bite of lime is followed by sweetness rushing in so neither one overwhelms. It’s a perfect balance with a melt-in-your mouth quality that is unforgettable.

The punchy lime in the cookie is furthered even more by the lime icing, a finishing touch that makes them perfect for an afternoon tea party or brunch.

A white chocolate icing would be delectable too!

The recipe is simple and easy, too easy. I highly recommend making a double batch as they don’t make a lot plus are small in size. Not to mention how utterly addicting they can be. Most will be eaten before the icing has time to set. Or if you’re a raw dough eater lover like me before they even have a chance to bake!

Soft Iced Lime Cookies

Soft, tart iced cookies that will melt in your mouth in a flurry of lime sweetness!


1/2 cup butter, room temperature
1/2 cup confectioners' sugar
1 teaspoon lime zest
1 teaspoon fresh-squeezed lime juice
1/2 teaspoon salt
1 cup all-purpose flour (like King Arthur)
3/4 - 1 cup confectioners' sugar
1 - 2 teaspoons lime juice
1 - 2 teaspoons milk or cream


  1. In a medium bowl on low speed mix butter, sugar, lime zest, juice and salt together. On low speed mix in the flour. Cover dough, and refrigerate for 1/2 - 1 hour.
  2. Preheat oven to 350 degrees. Scoop teaspoonfuls of dough and roll into a ball with your hands, place on baking sheets, 1 1/2" apart.
  3. Bake the cookies 10-12 minutes, until set in middle and lightly brown around the edges. Cool on pan for 5 minutes, remove to wire rack and cool completely.
  4. Whisk glaze ingredients together in a small bowl starting with the smaller amounts first and adding more juice, milk or sugar until it reaches a consistency that is easy to spread. Dip tops of cookies into glaze or use a butter knife to spread over top.
