Sunday Breakfast: Granola Waffles with Butter Pecan Syrup

Fluffy, golden waffles made better with a sprinkling of your favorite granola and topped off with an extra special butter pecan syrup.

Maple syrup is elevated to decadent new heights by buttery toasted nuts slowly simmered together to make a thick, sticky-sweet sauce. You will want to spoon this stuff over everything. It’s the best part.

The waffles have creamy interiors and crispy outsides. Their light texture combined with the chewy granola and the crunch of the nutty syrup is a threesome made in heaven. If you don’t like granola substitute dried fruit in its place.

I’m not one for carb-filled breakfasts. I’m more of a protein-packed-bacon-and-eggs-kind-of-girl but the lovely new waffle maker in my life is making it hard for me to stick to that regimen. How can I resist? With its five of hearts pattern I want to make waffles all the time.

I’m a total sucker for cute food. No resistance. At all. Ever.

Granola Waffles with Butter Pecan Syrup

Granola Waffles with Butter Pecan Syrup

Fluffy, golden waffles made better with a sprinkling of your favorite granola and topped off with an extra special butter pecan syrup.

Ingredients

Syrup:
2 tablespoons unsalted butter
1 cup chopped pecans or walnuts
1 cup maple syrup
1/4 teaspoon salt
a couple dashes of ground cinnamon
Waffles:
2 cups all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
3 eggs
2 cups buttermilk
4 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 cup of your favorite granola

Instructions

    Syrup:
  1. In a large skillet over medium heat melt the butter and add the nuts. Cook 3 minutes, stirring often.
  2. Add the syrup and salt, cook, stirring constantly for 2 to more 3 minutes, until slightly thickened.
  3. Remove from heat and mix in a dash or two of cinnamon.
  4. Waffles:
  5. Heat a waffle iron.
  6. In a large bowl whisk the flour, sugar, baking powder, salt, and baking soda together.
  7. In a separate large bowl whisk the eggs, buttermilk, melted butter and vanilla together.
  8. Pour the wet mixture into the dry mixture and fold to combine. The mixture may be a little lumpy.
  9. Cook the waffles according to the directions for your waffle iron.
  10. Serve immediately with your favorite granola sprinkled over top and the butter pecan syrup.
