Watermelon Cucumber Slushie

A watermelon, cucumber, mint and lime slushie with superior thirst-quenching properties. A light, cool and refreshing treat to hydrate you any time of the day or night.

Both watermelon and cucumber are mellow; watermelon being the stronger of the two and the dominant flavor in the slushie. They need the subtle zing of the fresh mint and the burst of brightness from the lime juice plus a little sweetening up from sugar or stevia to bring out their best.

You can whisk up the juice to have on hand in your refrigerator and blend up with ice when the mood for a slushie strikes you.

Watermelon Cucumber Slushie

A watermelon, cucumber, mint and lime slushie with superior thirst-quenching properties.

Ingredients

1 small cucumber, peeled, seeds removed and cut into chunks
5-6 cups seedless watermelon cubes
1/4 cup loosely packed fresh mint leaves
2 - 3 tablespoons sugar (or stevia, to taste)
1 - 2 tablespoons fresh lime juice
pinch of salt
3 - 4 cups ice

Instructions

  1. Combine first 6 ingredients in a blender and process until smooth.* (You can store this in the refrigerator 2 days and use as needed.)
  2. Add ice and process until smooth and slushy making it as thin or as thick as you like. Serve immediately.
  3. *Optional step (I skipped): Before adding ice strain the mixture through a wire strainer pressing down with the back of a spoon to push it through. Discard the solids.

  1. Wow, I just had to read this one. Watermelon and cucumber are both so cooling, and my husband is having all juice and smoothies for breakfast and lunch right now. It’s easy to think of yummy fruit smoothies, but adding vegetables is more challenging. I will definitely start experimenting with cucumber and watermelon, thanks!
