This delicious, juicy burger is topped with smoky Gouda, slices of Prosciutto and caramelized onions sandwiched in a flaky biscuit. This is one of the best burgers I’ve eaten in my entire life. Hands down. Have you ever had a burger melt in your mouth? It’s a pleasure you must experience.These were perfect alongside crispy oven fries.
I’m keeping it short and sweet today.

Loaded Biscuit Burgers

10 fresh Sage leaves
1-2 teaspoons Butter
¼ cup Mayonnaise(like Hellmann’s or Best Foods)
2 large yellow onions
2 tablespoons olive oil
Sea salt and fresh cracked pepper
Grands Biscuits, 1 canister
1 pound 85% lean ground beef
1-2 teaspoons Worcestershire Sauce
1 tablespoon water
1 tablespoon Butter
4 ounces Smoked Gouda, sliced
4 ounces Prosciutto, sliced
1. Sauté Sage leaves in a little bit of butter for a minute or two just to bring out some of the flavor. Remove to a paper towel, blot the grease off them and let cool. Chop and stir into the mayonnaise. Refrigerate until needed.
2. Thinly slice the onions into rings and sauté in a large skillet with the oil (season with salt and pepper) over low heat for 45 minutes.
3. In the meantime you can cook your biscuits according to the package directions and get your oven fries ready.
4. Place your Ground beef, Worcestershire, and a tablespoon of water in a large bowl. Lightly mix, don’t overwork the meat. Form into 8 even-sized balls. Season the balls with salt and pepper. Place one ball on top of the other and gently press them together. Don’t compact them, keep them kind of loose but nicely formed. Repeat until you have four burgers, making them a little larger than the biscuits to give them room to shrink. Cook in whatever way you prefer. I cooked mine in an iron skillet with a tablespoon of butter. When burgers are just about done place an ounce of Gouda on each one and melt. Put a lid over them if cooking on the stove top.
5. For assembly: Place the burgers on bottom of the sliced biscuits. Put an ounce of Prosciutto atop each one followed by the caramelized onions. Smear the tops of the biscuits with the sage mayo.
Oven Fries

5 medium to large potatoes
Sea salt and fresh cracked pepper
Paprika
1-2 teaspoons olive oil
Slice your potatoes into wedges. It’s up to you whether you want to peel them first, I like the skins on. Soak them in a bowl of warm water for a half an hour before cooking them. This will get some of the starch out of them and let them cook up a bit crispier. Preheat oven to 400 degrees. Pat dry and place in a large bowl. Toss with a olive oil, salt and pepper, and a sprinkling of paprika. Don’t over do it with the oil or they won’t turn out as crispy, just a light coating. Place on cookie sheet and cook on 400 degrees for about a half an hour.
